I like cheeseburgers. I love them smothered in cheese and caramelized onions and fresh, juicy tomato slices and avocado and red onion and … I’m now officially hungry. But there’s a problem with a cheeseburger: they are NOT our friend. Or, rather, they are not our waistline’s friend. Let me put it into perspective: a cheeseburger at Five Guys is a whopping 840 CALORIES. Let me put that in perspective: an average woman of average height and weight should be consuming approximately 1,400 calories a day. So if you eat this Five Guys cheeseburger, you will have eaten more than HALF of your daily allotted calories. WOWSERS!
The good news is that you don’t have to sacrifice flavor in order to eat a low-calorie and CLEAN cheeseburger. No, I’m not kidding. You CAN eat a cheeseburger while eating clean and IT DOES taste amazing!
This chicken burger recipe is my go-to burger recipe because 1) it’s incredibly easy to make and make ahead 2) it tastes amazing and is low calorie and clean AND it’s 21 Day Fix approved! and 3) my three year old LOVES it. I mean, she will scarf this bad boy down like it’s a bowl of ice cream!
Without further ado, here is the recipe and the 21 Day Fix container breakdown, below. This is just further proof that 1) 21 Day Fix is NOT a diet. It’s a lifestyle change to eat clean, not starve. And 2) eating clean does not mean missing out on all the yummy flavor you’ve become accustomed to while eating fat-laden and processed foods
Serves 4
INGREDIENTS
1 1/4 lbs. lean ground chicken (I have also used lean ground turkey) *Make sure it’s labeled “lean.” Otherwise the skin could be ground into the meat and, therefore, it hikes u the fat and calorie content, which is a no-no with clean eating
1/2 cup Part-skim ricotta cheese
1 1/4 tsp. Dijon mustard
1 1/4 tsp. Worstershire sauce
1/4 tsp. ground black pepper
1/4 tsp. salt
1/2-1 tsp. Canola oil
DIRECTIONS
Mix all ingredients until everything is mixed thoroughly. Create four equal-size patties. Heat oil in a pan over medium to medium-high heat. Add patties and cook 5 minutes each side. Cover. Cook an additional 5 minutes covered. Serve on a whole wheat bun or, better, serve on two crisp slices of Romaine lettuce. It’s amazing how refreshing and better it tastes when served on Romaine leaves!
