Delish Almond-Crusted Chicken!

This buttery, crunchy almond-crusted chicken from Hammer & Chisel is to die for!

YUM! YUM! YUM! That’s all I have to say about this chicken! I never thought you could have buttery, crusted anything while eating clean. Guess what? YOU CAN!

Better yet, the leftovers made a mean chicken sandwich! SO good! Oh, and did I mention my one- and four-year-old littles gibbled up the chicken, too? Score for, Mom!

This almond-crusted chicken is courtesy of the new Hammer & Chisel program, which is AMAZE BALLS. It is the brainchild of celebrity trainers Autumn Calabrese (creator of 21 Day Fix and 21 Day Fix Extreme) and Sagi Kalev (creator of Body Beast). Here’s the recipe with the 21 Day Fix container breakdown, below:

INGREDIENTS

  • 6 (4-oz) raw chicken breasts, boneless, skinless
  • 1/2 cup almond flour
  • 2 cloves garlic, finely chopped
  • 1 1/2 tsp. finely grated lemon peel (lemon zest)
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1 large egg, lightly beaten
  • 1/4 cup water
  • 1 Tbsp. olive oil

DIRECTIONS

  1. Preheat oven to 425 degrees.
  2. Place a chicken breast on a cutting board. Hold it flat with the palm of one hand and, with a chef’s knife in the other hand, carefully slice it in half horizontally (parallel to the cutting board). Repeat with the remaining chicken.
  3. Place each chicken breast half between 2 pieces of plastic wrap and pound with a mallet or tenderizer until 1/4 inch thick (or about twice the original size). Set aside.
  4. Combine almond flour, garlic, lemon peel, salt, and pepper in a shallow dish; mix well. Set aside.
  5. Combine egg and water in a shallow dish; whisk to blend.
  6. Dip each chicken breast into the egg mixture; dredge in almond flour mixture until evenly coated. Set aside.
  7. Heat oil in a large ovenproof skillet over medium-high heat.
  8. Add chicken breasts; cook for 3 to 4 minutes. Turn chicken.
  9. Place skillet in oven; bake for 10 to 12 minutes, or until a thermometer inserted into the thickest pat of each breast reads 165 degrees Fahrenheit.
  10. While chicken is baking, heat olive oil in medium skillet over medium heat.
  11. Add vegetables, cook stirring frequently for 2 to 3 minutes or until tender-crisp.
  12. Serve chicken with vegetables.

Easy (And Delish!) Rice & Beans!

If you love Mexican food, then you will love this classic side dish that’s full of flavor! Bonus: It’s 21 Day Fix approved!

I love Mexican food. But I do not love the calories and saturated fat and sodium and …oh the list goes on, doesn’t it?

So when I have a hankering for some good old rice and beans, I turn to this lovely recipe my sister in law passed along to me. It’s not only healthy, it’s 21 Day Fix and 21 day Fix Extreme approved! Score!

Even better for Fixers: it’s an easy yellow container to make in large batches ahead of time and you can eat it cold and it’s still delicious! So it’s perfect for lunches in the office or on the road when you need a yelloow but you just don’t want to eat another slice of whole grain bread or a whole wheat wrap over and over and over.

So here’s the recipe!

INGREDIENTS

Serves 2

  • 1 cup cooked brown rice
  • 1 can low-sodium black beans, rinsed
  • 1/4 teaspoon EVOO
  • Dash chili powder
  • Pinch cumin
  • 1/4 teaspoon coriander
  • 1 teaspoon Liquid Aminos (you can also use low-sodium soy sauce)

DIRECTIONS

  1. Cook rice according to instructions on package.
  2. Mix olive oil, Liquid Aminos, and spices together in sauce pan over medium heat. Once the mixture begins to boil, add black beans and stir until coated. Cook for one minute.
  3. Add bean mixture to brown rice and mix well.
  4. Serve with Chihula or hot sauce of your choice.
  5. Enjoy!

I’m in week 6 of ‪#‎Insanity‬ Asylum and Vertical Plyo is by far my favorite workout! My legs are on fire every.single.time! It’s 40 minutes of WORK. There’s no easy warm up. Hell, there aren’t even any water breaks! But it is SO fun and it keeps your muscles guessing, which, in turn, makes you stronger!

Here’s a snippet of that workout for you to try!

  • 10 vertical scissor jumps (squat ALL the way down and touch the floor)
  • Walk out with your hands and do 5 push ups.

A little treat for all of you looking for a quickie workout that really burns your entire body! This little combo is from Insanity Asylum, the program I am currently doing and in week 5 of 8! I LOVE this program! It’s never boring and it always keeps my muscles working and thinking. The results so far: my arms are WAY toned! I mean, hello triceps and shoulders!

Here’s the workout:

1) Do one push-up with weights.
2) Do spider lunges on each side.
3) Do another push-up.
4) Do 8 mountain climbers.
5) Return to standing. Do one set of 8, 3 sets total. Enjoy the burn! Comment, below, if you complete it!
