21 Day Fix Peanut Butter Cups!

Ok, I love chocolate. And I love peanut butter. And when Easter rolls around and those dang Reese’s peanut butter cups shaped like eggs come out, I buy, like, no joke, 8 of them. And hide them in my freezer so my husband (and kids!) can’t find them. I sneak bites of them throughout the whole spring and feel incredibly guilty every time a bite turns into eating the whole dang egg. (Why do they make these things taste SOOO good? Are there drugs in them or something?)

But the calories and fat are, of course, off the charts. And since this mama loves peanut butter cups like a fat kid loves cake, I had to find a solution to be PB cup dilemma. Enter my superfood, go-to snack Shakeology. Not only is this stuff jam packed with 70 superfoods, it also boasts the very best probiotic on the market and digestive enzymes that enable your body to soak up all the amazing nutrients you’re fueling your body with when you’re clean eating!

So when I found this super simple recipe for chocolate peanut butter cups featuring Shakeology I was OVER.THE.MOON! YESSSS! And you know what? They taste REALLY fricken AWESOME! So now I’m not only satiating my serious craving for chocolate + PB. I’m also fueling my body with some amazing nutrients thanks to Shakeology! SCORE!

Makes 2 servings

INGREDIENTS

  • 2 tsp. unrefined coconut oil, melted
  • 2 Tbsp. powdered chocolate peanut butter (like PB2)
  • 2 tsp. Chocolate Vegan Shakeology
  • 2 Tbsp. water

DIRECTIONS

1. Combine oil and powdered peanut butter in a small bowl; mix well. Set aside.
2. Combine Shakeology and water in a small bowl; mix until it has a pudding-like consistency. Set aside.
3. Coat two foil muffin liners evenly with half of peanut butter mixture. Top evenly with Shakeology mixture and remaining peanut butter mixture.
4. Freeze for 30 minutes, or until firm.

One of the biggest challenges I think a lot of parents face is getting enough fruits and veggies into their kids. I mean, when I was a kid I would stick my nose up at veggies, too. Which is exactly why cookbooks like Jessica Seinfeld‘s detailing how to “sneak” veggies and fruits into your main meals without your kids sniffing them out became a New York Times best seller. (Side note: this parenting thing is hard, y’all!)

So luckily, I honed in on what my little people like in order to “sneak” in those fruits and proteins: popsicles. These delish pops get my kids a serving of non-fat plain Greek yogurt–an excellent source of clean protein–plus a 1/2 serving of fruit. There are no artificial sweeteners or white sugar–just natural raw honey to help sweeten the popsicles a little. And the best part is that I like them, too! Ok, scratch that, I LOVE these things!

My kids feel like they’re getting a dessert, I feel like a decent mom for not letting them eat Oreo cookies, and I get to indulge, too. I mean, why wouldn’t you want to make these? 🙂

Without further ado, here’s the recipe, below, along with the 21 Day Fix container breakdown for those of you following this majorly awesome lifestyle eating plan! INGREDIENTS

  • 2 1/2 cups strawberries, hulled & chopped *I added some raspberries, too
  • 1 1/2 cups Greek yogurt
  • 1/4 cup honey
  • 1 tablespoon fresh lemon juice

DIRECTIONS

  1. Combine all ingredients in a blender, and process until smooth.
  2. Divide the mixture between popsicle molds. Place the molds in the freezer for at least 4 hours, until the popsicles are completely frozen.
  3. To remove the popsicles, run the molds under hot water for a few seconds.

I like cheeseburgers. I love them smothered in cheese and caramelized onions and fresh, juicy tomato slices and avocado and red onion and … I’m now officially hungry. But there’s a problem with a cheeseburger: they are NOT our friend. Or, rather, they are not our waistline’s friend. Let me put it into perspective: a cheeseburger at Five Guys is a whopping 840 CALORIES. Let me put that in perspective: an average woman of average height and weight should be consuming approximately 1,400 calories a day. So if you eat this Five Guys cheeseburger, you will have eaten more than HALF of your daily allotted calories. WOWSERS!

The good news is that you don’t have to sacrifice flavor in order to eat a low-calorie and CLEAN cheeseburger. No, I’m not kidding. You CAN eat a cheeseburger while eating clean and IT DOES taste amazing!

This chicken burger recipe is my go-to burger recipe because 1) it’s incredibly easy to make and make ahead 2) it tastes amazing and is low calorie and clean AND it’s 21 Day Fix approved! and 3) my three year old LOVES it. I mean, she will scarf this bad boy down like it’s a bowl of ice cream!

Without further ado, here is the recipe and the 21 Day Fix container breakdown, below. This is just further proof that 1) 21 Day Fix is NOT a diet. It’s a lifestyle change to eat clean, not starve. And 2) eating clean does not mean missing out on all the yummy flavor you’ve become accustomed to while eating fat-laden and processed foods

Serves 4

INGREDIENTS

1 1/4 lbs. lean ground chicken (I have also used lean ground turkey) *Make sure it’s labeled “lean.” Otherwise the skin could be ground into the meat and, therefore, it hikes u the fat and calorie content, which is a no-no with clean eating
1/2 cup Part-skim ricotta cheese
1 1/4 tsp. Dijon mustard
1 1/4 tsp. Worstershire sauce
1/4 tsp. ground black pepper
1/4 tsp. salt
1/2-1 tsp. Canola oil

DIRECTIONS
Mix all ingredients until everything is mixed thoroughly. Create four equal-size patties. Heat oil in a pan over medium to medium-high heat. Add patties and cook 5 minutes each side. Cover. Cook an additional 5 minutes covered. Serve on a whole wheat bun or, better, serve on two crisp slices of Romaine lettuce. It’s amazing how refreshing and better it tastes when served on Romaine leaves!

Like a lot of people I know, I get a hankering for something sweet after my dinner has settled. Before I started eating more cleanly and thinking more about what I was putting in my body, I would’ve grabbed a handful of chocolate chips (disclaimer: I still DO grab a handful of chocolate chips from time to time. Hey, I’m not perfect.). However, now I choose snacks like this (or a chocolate Shakeology, which I whip up to taste exactly like a Wendy’s Frosty!) to curb my after-dinner sweet tooth cravings.

I slice one apple–I prefer Gala or Fuji–then microwave 2-3 teaspoons natural peanut butter, which I then drizzle over top of the apple. What’s missing from this pic, though, that really does the trick for me is a couple dashes of cinnamon. People, this dessert tastes like an apple pie! Heavenly!

Summer is upon us–as in, SIX weeks!! If you need to get in shape, let me know, I can help!–and that means not only fresh veggies from fruit stands but it also means fresh berries! Ahh, I’ve been waiting all winter for fresh berries! And, if you’re anything like me, you love a sweet berry pie or, better yet, a berry cobbler dessert.

The only problem: berry cobblers are high in fat (hello, butter!) and sugar, which also means consuming a slice of cobbler won’t get you any closer to that bathing suit you bought for days at the pool.

But there’s good news! You CAN have your dessert and eat it, too! I found this awesome recipe on From Forks to Fitness and it is SO good! And it’s 21 Day Fix and 21 Day Fix Extreme approved, which also means it’s 100% CLEAN eating! Wahoo!

INGREDIENTS

Serves 1

  • 1/2 banana
  • 1/2 cup berries of choice (I used mixed berries)
  • 1/4 cup rolled oats (uncooked)
  • 2 tsp. peanut butter
  • Honey to taste

DIRECTIONS

  • Preheat oven to 375.
  • In a bowl, mash banana and combine with honey and peanut butter. Add oats and stir until fully incorporated.
  • Drop berries in bottom of jar and pour banana mixture on top.
  • Place uncovered jar in center of rimmed baking sheet.
  • Bake for 30 minutes.
  • Remove from oven and allow to cool.
  • To make it more decadent, whip up some nonfat Greek yogurt with a teeny but of honey and vanilla extract and top cobbler. SO GOOD!
