This mom of two right here has completely CRUSHED her health and fitness goals losing mad inches doing ‪21 Day Fix‬ and getting in THE best shape of her life! In 2010 she was working out and eating “well.” So how did she go from the pic on the left to the one on the right? Eating the right foods in the proper portions!!

You, too, may be working out every day and not seeing results like Jodi 6 years ago. “Yesterday I realized I was wearing the same workout clothes that I wore to compete in a sprint triathlon 6 years ago, so took a pic to see the difference. Nutrition is the difference here!

2010 picture: I trained for months to be prepared to swim .62 mile, bike 15 miles and run a 5k.

2016 picture: not really training for anything! Coincidentally, I am in a sprint triathlon relay team this weekend – I am running 2 miles. So I have ran once a week + usual workouts 30 min a day.

For me, I was eating the wrong amounts of the wrong foods, and not enough of the right ones. A few changes made all the difference!”

Summer is here and I love me some good ole summer salads. Black beans, avocado, CORN! Eat them hot or cold, summer salads are what grilling out is all about!

Years ago my good friend, Ashley over at Wee Wander, gave me this recipe. I’m not sure if she concocted it because she’s and former chef and all, but either way, it’s amazing. It’s super simple and yet the flavors are unlike any other veggie summer salad (or corn salad for that matter) that I’ve ever tried. The secret? Apple cider vinegar.

Here’s the recipe and 21 Day Fix container breakdown, below!

INGREDIENTS

  • 5 ears of corn, shucked
  • 1/2 cup red onion, diced
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. EVOO
  • 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. basil (dried) or 1 Tbsp. chopped (fresh)

DIRECTIONS

Boil corn for 3 minutes. Remove and plunge into ice water to stop the corn from cooking. Remove kernels and toss all ingredients (except fresh basil) together in a bowl. Allow to marinate for several hours or overnight. Toss with fresh basil before serving.

I LOVE chicken salad! LOVE it. Like, if I could live off Wawa’s chicken salad or the one Costco makes with its rotisserie chicken, I SO would.

But I can’t. I mean, that MAYONNAISE! It’s an absolute calorie killer–as in, it obliterates your entire calorie count for the day leaving you with only kale leaves to eat. (Yes, I like kale, too, but eating it raw? No, thank you.)

So how the heck do you make a decent chicken salad that’s oozing with flavor but doesn’t add 5 lbs. to the scale the next morning after you eat 1/4 cup of it? Well, lucky for you, I’ve got a recipe that’s not only 1) 21 Day Fix approved and SUPER clean but also 2) is SO tasty and SO flavorful you’ll have trouble not eating the whole batch. (Side note: even if you eat more than one serving, you’re STILL in MUCH better shape than devouring those mayo-heavy kinds.)

That being said, here is the recipe courtesy of my awesome cookbook FixAte. FixAte, in case you didn’t know, has more than 100 clean eating recipes–Sloppy Joes! Crepes! Brownies! Chili! Omelets!–that are so delicious options you won’t need to look anywhere else for a healthy meal.

Serving size: 1 1/4 cups

INGREDIENTS

  • 3 cups chopped rotisserie chicken breast (boneless/skinless) *I actually poach chicken breasts instead. Or, better yet, place them in a slow cooker for 4-6 hours on high with some chicken broth and you get super moist chicken that’s easy to cut up
  • 1/2 cup chopped green apple
  • 1/2 cup seedless red grapes, cut in half
  • 1/2 cup sliced almonds
  • 2 green onions, sliced
  • 2 Tbsp chopped fresh tarragon
  • 1/4 cup Honey Mustard Dressing (see below)
  • 8 cups shredded romaine lettuce

DIRECTIONS

  1. Combine chicken, apple, grapes, almonds, green onions, tarragon, and Honey Mustard Salad Dressing in a large bowl. Mix well, cover and refrigerate for 2 hours.
  2. Serve 1 1/4 cup Creamy Chicken Salad over 2 cups of romaine lettuce per serving.   
Honey Mustard Dressing:
** Serves 8 with 2 Tbsp. per serving
** 1 Orange Container
  • 1/2 cup reduced fat plain Greek yogurt
  • 3 Tbsp. Dijon mustard, gluten-free
  • 3 Tbsp. raw honey
  • 3 Tbsp. rice vinegar
  • 1/4 cup extra-virgin olive oil
  • Sea Salt to taste (optional)
Directions: Combine yogurt, mustard, honey, and vinegar in a medium bowl and mix well. Slowly add the oil, whisking constantly until well blended.

Sneak Peek of 22 Minute Hard Corps!

Tony Horton’s brand new 22 Minute Hard Corps comes out next month and I am STOKED to try it! Luckily, I got a sneak peek at the workout today on Beachbody On Demand! Here’s my review of it:

  • It’s a GREAT workout in just 22 minutes. There’s little to no warm up and you dig right in from the start so if you don’t like jumping into a workout relatively cold, try a few jumping jacks beforehand.
  • It’s a compilation of military-inspired bootcamp moves. Think burpees, shuttle runs, and, like in the video, bear crawls.
  • It’s a fantastic precursor to 21 Day Fix Extreme or Insanity Max30. Those two programs are pretty intense so if you’re ready for something more than regular 21 Day Fix, this is a fantastic option or add on to your current routine.

I have a love affair with Martha Stewart. Every time the new issue of Martha Stewart Living arrives in my mailbox, I scour it like mad for recipes just like a kid eating cake. So when I saw this recipe and looked over the ingredients and looked over the preparation and saw how clean it was, I jumped for joy! (Do you ever get that way when you find a recipe that’s not loaded in fat and oil and, well, calories?)

Better yet, it’s 21 Day Fix approved, which, to be honest, is how I eat every.single.day. This is not a diet, people. It’s a lifestyle. And it’s how I lost 10 inches and 15 lbs. and completely transformed my body from schlumpy to fit.

But anyway, enough about that, you want the recipe, don’t you? 🙂 Here it is, below, with the 21 Day Fix container breakdown! Devour it and share it with your friends if you love it like my family does!

INGREDIENTS

  • 1 pound boneless, skinless chicken-breast halves (3 to 4 halves)
  • Extra-virgin olive oil, for brushing and drizzling
  • Coarse salt and freshly ground pepper
  • 4 6-inch whole wheat pitas (we have also used whole wheat naan and it’s delish! If you use naan, a 1/2 equals 1 yellow container)
  • 1 1/3 cups prepared hummus
  • 1 cup cherry tomatoes, halved (about 4 ounces)
  • 2 scallions, trimmed and thinly sliced (about 4 ounces)
  • 1/2 small head radicchio, spinach, or kale, thinly sliced and/or chopped (about 2 1/2 cups)
  • 1/2 cup crumbled feta (2 ounces)
  • 1 lemon, quartered
  • Balsamic vinegar

DIRECTIONS

  1. Preheat grill to medium-high. Brush chicken with oil; season with salt and pepper. Brush grates with oil. Grill chicken, turning once, until cooked through and lightly marked in spots, 6 to 8 minutes. Transfer to a cutting board. When cool enough to handle, cut into strips.

  2. Brush both sides of each pita with oil. Grill, flipping once, until lightly marked and crisp, 4 to 5 minutes. Spread 1 tsp. of hummus on one side of each pita. Top with chicken, tomatoes, scallions, radicchio, and 1/2 blue container of feta. Drizzle with oil; serve immediately with lemon and balsamic vinegar.

These yummy (and kid-friendly!) beef chorizo tacos are 21 Day Fix approved!

I love tacos. I also love anything that’s clean eating AND kid friendly. (Hey, when you’re a mom of an almost four year old, the things you love these days are pretty simple.) I came across this recipe in All You magazine and decided to give it a whirl. And wow. SO good. AND 21 Day Fix and 21 Day Fix Extreme approved! Score!

Best of all? I was able to cook the meat and prepare the salad ahead of time so that we could easily just heat up the meat and corn tortillas and sit down quick to eat! Plus, all of the clean up was done!

Here’s the recipe, which I tweaked just a bit because I felt the slaw needed a little more tang:

One Serving includes 2 tortillas

INGREDIENTS

4 cups very thinly sliced red cabbage
1/3 cup cilantro leaves
4 tablespoons white vinegar, divided
3 tablespoons olive oil, divided
3/4 teaspoon salt, divided
1 tablespoon paprika
2 teaspoons ground cumin
1/2 teaspoon black pepper
5 garlic cloves, finely chopped
1 pound 90% lean ground sirloin (I used lean ground beef but you could also use lean ground chicken or lean ground turkey, too)
12 (6-inch) corn tortillas

DIRECTIONS

1. Combine cabbage and cilantro in a medium bowl.

2. Combine 2 tablespoons vinegar, 1 tablespoon oil, and 1/4 teaspoon salt in a small bowl, stirring with a fork or whisk.

3. Drizzle vinegar ­mixture over cabbage mixture; toss well to combine. Set aside.

4. Combine remaining 2 tablespoons vinegar, remaining 2 tablespoons oil, remaining 1/2 teaspoon salt, paprika, cumin, pepper, and garlic, stirring well with a fork or whisk.

5. Heat a large nonstick ­skillet over ­medium-high heat. Add beef; cook 5 minutes or until browned and done, stirring to crumble.

6. Stir in vinegar-spice mixture; cook 2 minutes or until liquid almost evaporates.

7. Heat tortillas over medium-high heat directly on the eye of a gas or electric burner or in a skillet for about 10 ­seconds on each side or until lightly charred.

8. Spoon about 1/4 cup beef mixture and 1/4 cup slaw into each tortilla.

A Burger Recipe You DO NOT Want to Miss!

I like cheeseburgers. I love them smothered in cheese and caramelized onions and fresh, juicy tomato slices and avocado and red onion and … I’m now officially hungry. But there’s a problem with a cheeseburger: they are NOT our friend. Or, rather, they are not our waistline’s friend. Let me put it into perspective: a cheeseburger at Five Guys is a whopping 840 CALORIES. Let me put that in perspective: an average woman of average height and weight should be consuming approximately 1,400 calories a day. So if you eat this Five Guys cheeseburger, you will have eaten more than HALF of your daily allotted calories. WOWSERS!

The good news is that you don’t have to sacrifice flavor in order to eat a low-calorie and CLEAN cheeseburger. No, I’m not kidding. You CAN eat a cheeseburger while eating clean and IT DOES taste amazing!

This chicken burger recipe is my go-to burger recipe because 1) it’s incredibly easy to make and make ahead 2) it tastes amazing and is low calorie and clean AND it’s 21 Day Fix approved! and 3) my three year old LOVES it. I mean, she will scarf this bad boy down like it’s a bowl of ice cream!

Without further ado, here is the recipe and the 21 Day Fix container breakdown, below. This is just further proof that 1) 21 Day Fix is NOT a diet. It’s a lifestyle change to eat clean, not starve. And 2) eating clean does not mean missing out on all the yummy flavor you’ve become accustomed to while eating fat-laden and processed foods

Serves 4

INGREDIENTS

1 1/4 lbs. lean ground chicken (I have also used lean ground turkey) *Make sure it’s labeled “lean.” Otherwise the skin could be ground into the meat and, therefore, it hikes u the fat and calorie content, which is a no-no with clean eating
1/2 cup Part-skim ricotta cheese
1 1/4 tsp. Dijon mustard
1 1/4 tsp. Worstershire sauce
1/4 tsp. ground black pepper
1/4 tsp. salt
1/2-1 tsp. Canola oil

DIRECTIONS
Mix all ingredients until everything is mixed thoroughly. Create four equal-size patties. Heat oil in a pan over medium to medium-high heat. Add patties and cook 5 minutes each side. Cover. Cook an additional 5 minutes covered. Serve on a whole wheat bun or, better, serve on two crisp slices of Romaine lettuce. It’s amazing how refreshing and better it tastes when served on Romaine leaves!
