Summer is here and I love me some good ole summer salads. Black beans, avocado, CORN! Eat them hot or cold, summer salads are what grilling out is all about!

Years ago my good friend, Ashley over at Wee Wander, gave me this recipe. I’m not sure if she concocted it because she’s and former chef and all, but either way, it’s amazing. It’s super simple and yet the flavors are unlike any other veggie summer salad (or corn salad for that matter) that I’ve ever tried. The secret? Apple cider vinegar.

Here’s the recipe and 21 Day Fix container breakdown, below!

INGREDIENTS

  • 5 ears of corn, shucked
  • 1/2 cup red onion, diced
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. EVOO
  • 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. basil (dried) or 1 Tbsp. chopped (fresh)

DIRECTIONS

Boil corn for 3 minutes. Remove and plunge into ice water to stop the corn from cooking. Remove kernels and toss all ingredients (except fresh basil) together in a bowl. Allow to marinate for several hours or overnight. Toss with fresh basil before serving.

It’s time for ‪#‎TransformationTuesday‬! They say a picture is worth 1,000 words, but forgive me while I use a few words to say how INCREDIBLY proud I am of one of the coaches on my team, Erin Brittain.
 
Six months ago she reached out to one of my coaches, Josephine Scoville, about wanting to join one of her challenge groups. Erin was ready to make a change, but not sure how to go about it. With the incredibly effective and sustainable #21DayFix program, in just 30 minutes a day, she has TRANSFORMED her body and her life. Totally stoked because I found a fruit gummy substitute! These freeze-dried fruit have 1/4 of the sugar per serving than a pack of those dang fruit gummies I was giving my poor littles! Because they’re freeze dried (not to be mistaken with dried fruit, which are incredibly high in sugar), they maintain *almost* all of the fruits’ nutrients and vitamins. So while it’s not *exactly* the same as eating raw fruit, it’s WAY better than those gummies! Yay!!

#WorkoutWednesday There are SO many moves from #InsanityMax30 that I love and swear by!! For the FIRST time in my life, I’m excited to wear tank tops and maxi dresses ALL.SUMMER.LONG because my arms feel toned and strong 💪🏼💪🏼 ALL because of Max30 + #cleaneating!! Yip yip yip!!

This move is just one of literally dozens and dozens in Max30 that KICK.YOUR.A**. (Hence, the obscene amount of sweat dripping off my face.) It’s a triceps pushup into a Superman. It works your abs, your back, your shoulders, your quads, well, EVERYTHING! The key is to do it at a fairly good pace to get things burning 🔥🔥 and your heart rate up!
