Brown Sugar & Mustard-Glazed Salmon

You’re not going to believe this, but for years, I never tried salmon. Like, wouldn’t even take a bite of it. I hated the smell (too fishy) and I swore up and down that if it smelled like that then it clearly could not taste anything but, well, fishy.

But as I matured in my old age (LOL), I began to try just about everything you would put in front of me. You see, besides writing about health and fitness and nutrition topics for major magazines like PreventionFamily CircleSELF, among many others, I also am a travel writer. Which also means I get to go on some pretty ridunkulous trips to places that you would, well, read about in magazines. And on these trips I get to eat some of THE most amazing food. Caviar. Escargot. Octopus. Literally, the best foods in the world.

So it really was only a matter of time before I gave into trying salmon. And thank goodness I did. Because now I am officially addicted. And to date, this is the only recipe I ever make with it at home. (I’ll try it all kinds of ways while out at a restaurant, but this is my tried and true recipe.) Why? Because it’s that good. And it’s from Bobby Flay. The guy is a restaurant icon. And he knows his stuff. Clearly, from the flavors in this recipe he knows his stuff.

So here is the most amazing, kick-a** salmon recipe (great for both salmon filets and salmon steaks) you will EVER eat! Enjoy!

Serves 8

INGREDIENTS

  • 3 tablespoons light brown sugar
  • 1 tablespoon honey
  • 2 tablespoons butter
  • 1/4 cup Dijon mustard
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon finely grated ginger
  • Vegetable oil
  • Salt and freshly ground black pepper
  • 8 salmon fillets, 6 ounces each

DIRECTIONS

On the side burner, melt the brown sugar, honey and butter in a small saute pan over medium-high heat. Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger. Let cool.
Preheat grill to medium heat. Brush salmon with vegetable oil and season with salt and pepper to taste. Place the salmon skin side down on the grill. Coat the flesh of the salmon fillets with the brown sugar mixture. Grill for 6 to 8 minutes to medium doneness, turning once after 5 to 6 minutes.

For years, I only kinda sort of paid attention to my nutrition. I *thought* I was eating well. After all, I was counting calories, as tedious and annoying as it was, and working out hard. But the problem was, even though I was in my calorie range each day, I was eating all the wrong things. I was eating WAY too many carbs and fats and not enough protein and veggies. Hence why I’d workout like crazy and see ZERO toning and definition in my muscles.

And then, one day, I got SO sick of making excuses for myself as to why I could never get toned up. It’s bad genes. It’s my body storing fat for having babies. It’s what you look like after having kids. I finally called bullsh*t on myself after baby #2, and got serious about my nutrition and goals.

I finally figured our exactly what foods in what portions would fuel my body best to get results. And you know what? After working my tail off in the gym FOR YEARS, I finally saw the body I imagined was under there, dying to come out.

Do I still have cellulite? Heck yeah. Do I still have stretch marks from two babies? Absolutely! Are there still areas I wish were tighter/stronger/leaner? Of course. But today, I’m SO happy I finally went for it. Because how I feel right now is exactly how I imagined it would be :).

No, it’s not. It looks gross, right? And yet every dang morning I’ll grab a piece or two of cold waffle leftover from my kids’ breakfasts. Why? I cannot even tell you. I just know it’s a major struggle for me to resist these gross, COLD pieces of leftover waffle. Please tell me I’m not the only one who partakes in this? It’s totally my downfall!

For years, I loved running. I especially loved early morning runs when it was dark and everyone was still asleep. I could run and get lost in my thoughts and literally feel my stress leave my body. As I watched the sun rise on those mornings, I always felt more clear, happier, and motivated.

Then osteoarthritis happened. And those long morning runs I loved were gone. For years I silently struggled to find something that could compare to that feeling I’d have after a run, watching the sun come up. But nothing ever compared.

Until now. You see, when I’m working out at home with the garage door wide open and fresh air pouring in, I can watch the sun rise and wash over me as sweat drips down my face. It feels SO close to those morning runs I miss so much and sometimes I think it’s even more fulfilling for me.

Got myself some new digs at the Nike outlet yesterday. Kinda in love 💗💗 with these pants, y’all. Dare I say they made me push harder during my Max30/Hammer & Chisel workouts this morning ;)💪🏼👍🏻.

Pistachios!

Current obsession: pistachios! 💗💕 Did you guys know that pistachios are called the lean nut? Yep, they are! These bad boys have only 4 calories each!! Plus, because you have to shell each one, you tend to eat less because your stomach and mind catch up to each other. So while I may scarf down cashews no prob and easily eat 500 calories worth in two handfuls, when it comes to pistachios I take my time AND save calories. Score!

Anyone else love these little nuts?
